Bananas about Baked Oatmeal!

Sweetly satisfying – this hot toasty breakfast, Baked Banana Oatmeal, will warm your soul.

I came across this post for the baked banana bread oatmeal on Iowa Girl Eats and wanted to try it but didn’t have my computer up so I just had to wing it.  I made up the oatmeal the night before and set my coffee maker. 

The next morning took my two Labradors for a walk, got back, popped the oatmeal in the oven and hopped in the shower.  When I was out I had hot toasty breakfast and fresh coffee all ready for me and milk for my one-year-old daughter.

Baked Banana Oatmeal  

Baked Banana Oatmeal

Printable Recipe

1 banana, chopped
¾ cup rolled oats
1 cup soy milk
Pinch cinnamon
Pinch salt
Pinch nutmeg
1 capful vanilla
1 Tbsp flax seed
EVOO spray


1. Spray a small baking dish with EVOO spray.  Lay bananas across bottom evenly.

2. Spread the oats on top of the banana and pour the soy milk over that. 

3. Add your spices and vanilla and top with flax seed.

4. Bake at 375 degrees for 30 minutes.
