I had just done my grocery shopping in the morning and she was coming by the house so I made lunch for us. She is a person I love to cook for because she genuinely appreciates the effort and presentation and is always complimentary. (Not that she is biased in ANY way). What’s not to love?!
This was the simple, delicious lunch I made for us.

Cranberry-Pomegranate Chicken Salad Sandwich
Ingredients
1/3 cup cranberry pomegranate chicken salad
2 Tbsp hummus
1 Campari tomato sliced thinly
½ whole wheat pita bread
¼ cup organic baby lettuces
Directions
1. Spread the hummus on the inside of the pita.
2. Gently stuff pita with chicken salad, tomato and baby lettuce.
3. Serve with organic yellow and orange baby carrots.
