Today has officially been deemed CRANBERRY-POMEGRANATE DAY. Soon to catch on and become a national bank holiday so we can have the day off, sit around and smile red toothed grins as we eat cranberries and pomegranates all day. I don't know about you but that sounds infinitely better than working. And, sitting in a cubicle doesn't provide any as many antioxidants (although, just wait a few years and studies will show cubicle life has more antioxidants, fiber and vitamin A than spinach). What makes me smile so much about pomegranates? They POP and CRUNCH at the same time you get a splash of yummy juice and they look so darn festive.

Holiday Cranberry-Pomegranate Chicken Salad
Ingredients
2 cups rotisserie chicken, chopped
1/2 lemon, juiced
2 ribs celery, chopped
2 Tbsp red onion, diced
Palmful fresh cranberries, chopped
1 tsp jalapeno, finely chopped
Palmful pomegranate berries
1 4oz container Oikos Organic Greek Yogurt with honey
Salt and Pepper, to taste
Directions
1. Mix all ingredients but the pomegranate berries.
2. Add the pomegranate berries and gently fold into the chicken mixture.
***this prevents breaking the delicate berries.
