I hadn’t planned on buying anything but somehow managed to buy $60.00 worth of groceries before I left the store. One of the items was a package of the above heirloom tomatoes. I spent some time doing photography practice on them (I am still working on getting that new camera), they were so pretty! I also picked up some quinoa and made a snack salad for myself with some mustard vinaigrette I had left over from last week. It was so snacklicious I had to share.
Quinoa and Heirloom Tomato Salad with Mustard Vinaigrette
Quinoa and Heirloom Tomato Salad with Mustard Vinaigrette
Ingredients
4 heirloom tomatoes, chopped
1/4 cup cooked quinoa
2 Tbsp red onion, chopped
1/2 cup fresh organic baby spinach
1/2 cup fresh organic baby lettuce mix
1 Tbsp mustard vinaigrette (recipe follows)
Directions
1. Place the baby spinach and lettuce in a small bowl, top with quinoa, red onion, tomatoes and mustard vinaigrette.
Mustard Vinaigrette
Ingredients
1 Tbsp Grey Poupon harvest coarse ground mustard
1 Tbsp apple cider vinegar
1 tsp agave
1 tsp good quality extra virgin olive oil
1 tsp good quality extra virgin olive oil
Sea salt and pepper to taste
Directions
1. Whisk all ingredients together.
