Quinoa and Heirloom Tomato Salad with Mustard Vinaigrette

Fresh Market is a local specialty grocery store that recently re-opened near my house.  This past Saturday I finally got to go for a visit.  It's one of those lovely places you just want to browse around.  Fresh breads, local and organic fresh produce, quality meats and the best part of course, samples!  I got to try some pumpkin spice coffee, hot apple cider and brie topped with caramel sauce on ginger snaps.  Happily, every one of those calories was worth it...everything was perfectly delicious.

I hadn't planned on buying anything but somehow managed to buy $60.00 worth of groceries before I left the store.  One of the items was a package of the above heirloom tomatoes.  I spent some time doing photography practice on them (I am still working on getting that new camera), they were so pretty!  I also picked up some quinoa and made a snack salad for myself with some mustard vinaigrette I had left over from last week.  It was so snacklicious I had to share.





Quinoa and Heirloom Tomato Salad with Mustard Vinaigrette
Printable Recipe

Ingredients
4 heirloom tomatoes, chopped
1/4 cup cooked quinoa
2 Tbsp red onion, chopped
1/2 cup fresh organic baby spinach
1/2 cup fresh organic baby lettuce mix
1 Tbsp mustard vinaigrette (recipe follows)

Directions

1. Place the baby spinach and lettuce in a small bowl, top with quinoa, red onion, tomatoes and mustard vinaigrette.

Mustard Vinaigrette

Ingredients
1 Tbsp Grey Poupon harvest coarse ground mustard
1 Tbsp apple cider vinegar
1 packet Splenda Fiber
1 tsp good quality extra virgin olive oil
Sea salt and pepper to taste

Directions

1. Whisk all ingredients together.
