Simply Breakfast Egg Sandwich

I am the self proclaimed queen of egg whites but today I just wanted a dang yolk. Thinking of an Egg McMuffin I threw an egg in the pan, toasted an Arnold Sandwich Thin and put a piece of cheddar underneath. You can't see the cheese but it's there hiding under the egg. I like my yolks just a bit runny so when I bit into the sandwich it mixed with the cheese and added a saucy smoothness to the toasted bread.  Mmmmmm..........


















Simply Breakfast Egg Sandwich
Ingredients

1 Egg
1 slice cheddar or American cheese
1 Arnold Sandwich thin (AST)
EVOO spray
Tony Chachare's Cajun seasoning
Fresh cracked pepper


Directions
1. Heat a small skillet over medium heat and spray with EVOO spray.

2. Spray both sides of the AST with EVOO spray and toast.

3. Crack the egg in the pan and let it sit until the white starts to firm enough to flip.  Flip once and then sprinkle pepper and Cajun seasoning to taste.  Cook to desired doneness. 

4. Top the bottom half of the AST with cheese, put the egg on top of that and then top with the other AST half.

EAT!
