Broiled Cajun Mahi

This was my day yesterday; get up, shower/hair/makeup, coffee, heat up my oatmeal and make up daughter's toast, get her dressed, me dressed, drop her off at school, go to work, Body Pump at lunch, back to work, back home, broil Mahi, heat daughter's dinner, photograph fish, eat, bathe daughter and put her to bed, do P90X routine with Chris, prep recipe swap casserole and at same time log onto phone and hit "publish post" for my blog, get ready for next day, collapse into bed at 9:30 PM. 

Does this sound like your day?  I actually got into bed and said to my husband "There wasn't one minute to spare today!"  But today was a good day because I already had my casserole prepped and I did YOGA on my lunch break.  Deep breath in.....and lowly release.  Ahhhhh.

One thing I thought of as we were eating dinner was how easy broiling fish is.  Have you noticed how sometimes the simplest recipes are the best? 

Broiled Cajun Mahi

Ingredients

2 Mahi Fillets
1 lemon
EVOO spray
2 tsp light butter with canola oil
Tony Chachere's Cajun seasoning
6 slivers/slices of fresh Asiago cheese

Directions

1. Preheat broiler.  Place rack about six inches below burner.

2. Spray a casserole dish with EVOO spray and lay the fillets in.  Spray those as well, cut and squeeze the lemon over the fillets then season with Cajun seasoning.  Broil for 6 minutes.

3. Flip fish and top each fillet with butter.  Broil an additional 6 minutes.  Top with cheese and broil another minute to melt cheese.  Add some additional seasoning on top.
