Chicken and Roasted Red Pepper Hummus on a Corn Tortilla

Here is my first attempt at a wheat free meal for my daughter after finding out she is allergic to everything.  I had bought some hummus to make sort of a chicken salad but then read the ingredients and it had soybean oil in it.  I found this recipe for roasted red pepper hummus on the Gluten Free Goddess website so I made the exact recipe but just added some honey to make it a little sweeter for my little honey.    

***Please note that when I state “allergy free” this is my attempt at gluten, egg, dairy, soy, peanut and cod fish free which are the allergies my daughter has. I am not a doctor or registered dietitian.

Chicken and Roasted Red Pepper Hummus on a Corn Tortilla

Ingredients

1 corn tortilla
Handful of fresh spinach, shredded
1/3 rotisserie chicken breast, chopped finely
1-2 tsp honey

Directions

1. Mix the chicken, hummus and honey in a small bowl.

2. Top the tortilla with the chicken mixture and some spinach.

Looks delicious! I'm glad you like the recipe. The addition of honey is interesting- I bet it's fabulous.
