Have you heard of Chocolate Underground?  It’s a yogurt from Stonyfield.  It tastes wonderful but is very sugary.  This is my healthier non-dairy version with blueberries.
Overnight Blueberry Underground
Vegan, Gluten Free, Dairy Free

Ingredients
1/2 cup fresh or frozen blueberries
3/4 cup French vanilla soy, almond or rice yogurt (or yogurt of choice)
Pinch of cinnamon
1/8 cup crunchy cereal of choice

Directions
(This can be prepped the night before with the frozen blueberries so they have time to thaw or make the morning of with fresh)
1. Layer blueberries, cinnamon and yogurt in a small bowl; cover and refrigerate.

2. When ready to eat, top with cereal (so it stays crunchy).

  1. Great recipe! I used to eat Fiber One all the time.
    Actually, I would snack on it. Love it in yogurt
    and the blueberries (my favorite) make it like candy.
