If you are familiar with food blogs you will see a plethora of oatmeal recipes but I couldn't find many for baked steel cut oats. I love this idea because I can stick it in my toaster oven and forget it until after I take my shower, do my hair and makeup. This one is also gluten free and dairy free.
I tried several different methods before posting the final recipe. I tried covered, uncovered and various temperatures but when it comes to steel cut oats there's no rushing them. Good things come to those who wait though, so trust me, this is worth the 30 to 35 minute wait.
This can either be made right when you are ready to cook or you can make several batches up and leave them, covered, in the refrigerator. This morning I simply popped a pre-made one right from the refrigerator into the toaster oven on 400F and took my shower. It was all toasty and warm when I was ready.

Baked Peanut-Butter-Banana Steel Cut Oats
***Gluten and dairy free (contains eggs (in the Naturally More), peanuts and tree nuts. To make egg free, sub natural peanut butter for the Naturally More.)

Serves 1
Ingredients
Organic canola cooking spray
1/4 cup steel cut oats, I used Bob's Red Mill Gluten Free Steel Cut Oats
1/8 tsp cinnamon
1/8 tsp kosher salt
1/2 Tbsp PB2 (optional)
1 tsp vanilla
1/2 cup vanilla unsweet almond milk, I used Almond Breeze
1/2 banana, sliced thinly
1Tbsp peanut butter, I used Naturally More
Directions
1. Spray a small baking ramekin with cooking spray. Layer half the bananas on the bottom.
2. In a small dish mix the oats through the almond milk and pour on top of the bananas.
3. Bake in a preheated oven or toaster oven at 400F, uncovered, for 30-35 minutes.
4. Top with remaining bananas and dollop of peanut butter.

Sounds heavenly! And I gotta say - I looked for the unsweetened vanilla almond breeze in my grocery store, and they only had it in refrigerated half-gallons, not not the quart-sized cartons. I knew I'd never get through the half gallon before it expired, so I settled for the original variety in the quart carton. So then I saw in your link that I could get 12 cartons for $22.95 - that works out to a good deal less than I paid. Well too bad when I clicked to order I found that shipping is $30?! ouch. I guess I'll keep looking around!
