Afterwards I dropped off a gigantic amount of clothing, dishes, purses, shoes and other unused trinkets at the Goodwill and I felt great. Like a weight had been lifted. A sense of renewal. Refreshed.
Then it was time to shop.
Did I miss the whole point?
Nah! I took myself to the outlet mall and hit a few places to get some work outfits and shoes and then made my way back to target. They had pillows on sale and I needed some for the guest bedroom. If you have been to target you will notice that the bathing suits are out. For some reason I thought it was a good idea to try one on.
This is where the Peanut Butter Cup Ricotta dessert came from; that bathing suit and a throwback from the South Beach Diet. I need to lose about five pounds even after the stomach virus I had a few weeks ago.
In the mean time I went and got myself some part skim ricotta and decided to utilize the peanutbuttery goodness of PB2. Have you heard of it? It's a wonderful product I original found on Cara's website. Please visit her, she is awesome. PB2 is a natural peanut product that has no preservatives or other nasty chemicals and they have pressed the oil out of it so it has a lot less fat and calories that peanut butter. You simply reconstitute it with a liquid of choice (I like to use coffee) or mix it in with other foods or in recipes. I don't necessarily like to eat it plain as I miss the weight and satisfaction of real peanut butter but it's SO wonderful in desserts or other dishes to add the peanut flavor.
Chocolate Peanut Butter Cup Ricotta
3 Servings
Ingredients
1 cup organic part skim ricotta
4 Tbsp PB2 chocolate
1 tsp vanilla extract
1/4 tsp cinnamon
1 tsp Hershey Special Dark Cocoa powder
1 tsp chocolate chips
2 packets Stevia or sweetener of choice
2 Tbsp black coffee
Directions
1. Mix all ingredients in a bowl.
It's great topped with the whipped topping of your choice too!
