Spiced Pork Tenderloin

Organic and humanely raised pork tenderloin is great for busy weeknight dinners.  I picked this gorgeous one up at Native Sun, my local natural food store.  Tenderloin is a lean cut, super low in fat, quick cooking and marinates well.

The recipe I used for this Spiced Pork Tenderloin was another taken from myrecipes.com.  It is a blend of sweet and spicy that reminded me of the marriage of honey and soy sauce.  A winning combination and a great alternative.  I used the exact recipe listed on the website; however, I reserved the marinade and brought it to a boil in a sauce pan and then lowered the head and reduced it while the pork was grilling.  I also put mine with a side of couscous but added some freshly steamed veggies as well to round out the meal.

My husband Chris and I both went in for a second round.

In the marinade:
Sugar (You could use any sweetener of choice.  I used Turbinado)
Bourbon
Worcestershire sauce
Ground cinnamon
Salt
Freshly ground black pepper
