London Broil

Happy Tuesday everyone!  I actually had a great Monday that consisted of getting to work on time, getting a body pump class in and making the best Sloppy Joe's ever after work.  I'll be posting that recipe later. 

How was your Monday?  Are you the kind of person that dreads Monday or do you like to get the week started?  I tend to not be super excited about Mondays.  I'm more of a Friday kind of girl, but, I do like my weekly routine and I think I would miss it if Monday never showed.

I mentioned a while back that I was watching Paul Deen while on the treadmill and that particular episode featured her son Jamie making this amazing Southwest salad.  The next recipe he made was Paula's London Broil recipe which is featured here.  I finally got around to making it and it came out great.  I, of course, grilled some more veggies because the weather has been so gorgeous and used some of the fresh arugula I got from the farmers market.  It came out really well.  The glaze created a nice crust on the outside and it was wonderful with the smokiness of the grilled veggies.

Grilled Balsamic London Broil
Altered from Paula Deen's Balsamic Glazed London Broil

Ingredients

1 (3-pound) London broil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground
black pepper
1/3 cup balsamic vinegar
1 tablespoon packed brown sugar
1 tsp minced garlic
1 bay leaf
1 Tbsp agave or honey

Salad

Fresh arugula
Grilled tomatoes, onions and mushrooms
Goat Cheese


Directions


1. In a sauce pan add the salt through the agave and simmer until reduced by half.  Let cool.

2. Place the meat in a zip top bag and pour the cooled balsamic mixture in.  Marinate over night.

3. When ready to cook bring the meat up to room temperature.  Preheat the grill to medium high and grill the meat to desired doneness, about four or five minutes per side.

4.  Let the meat rest for five to ten minutes and then slice thinly against the grain. 

5. Serve over arugula and top with grilled veggies and goat cheese.  Top with any dressing you like or even leave it off!

I love all the grilled veggies here! I can bored using just fresh veggies on salads all the time, but grilling them makes a completely different salad experience :)
