This started out as "Low Calorie Breakfast Ideas, a Little Sweeter", but then I came across an egg bake that reminded me a lot of my baked steel cut oats only savory and a lot lighter. I tried it out and it was amazing! I hope you like the other two as well. The second one was tasty but it didn't keep me full for very long (I know a lot of people don't like the cottage cheese texture) and the last one was my favorite sweet/light/filling breakfast yet!

Egg Bake
Adapted from Naturally Ella
Ingredients (amounts are approximate)
Grilled veggies to fill 3/4 of ramekin, (any veggie can be substituted here)
2 Tbsp, Light cream cheese
1/3 cup Egg whites
Tony Chachare's Cajun Seasoning, to tasteDirections
1. Preheat oven or toaster oven to 375F.
2. Layer veggies, cream cheese and egg whites then sprinkle seasoning.
3. Bake for 25-30 minutes or until eggs are set.

Pineapple Toast (plus Apple Pie Variation)

Ingredients
1 slice of Nature’s Own Double Fiber Wheat bread or 2 slices reduced calorie, high fiber whole wheat bread
1/4 cup of reduced fat cottage cheese
1 tsp sweetener or packet of sweetener of choice, I used Truvia
1 teaspoon of cinnamon
1 small slice of pineapple or 2 Tbsp crushed pineapple
Directions
1. Toast Wheat bread and top with cottage cheese.
2. Sprinkle with cinnamon and sweetener then place a small pineapple on top.
3. Place under the broiler and cook until the cottage cheese turns bubbly and starts to brown.
4. Eat with a knife and fork.
Apple Pie version of Pineapple Toast
Sub 1/4 cup chunky apple sauce for pineapple
VitaTop with Fruit and Yogurt

Cran-Bran VitaTop with Blueberries and Yogurt
1/3 cup Low Fat French vanilla yogurt, I used Stonyfield
1/2 cup fresh or frozen blueberries
Cinnamon, to taste
1 packet Stevia or sweetener of choice, I used Truvia1 tsp chia seeds, optional

1. Toast the Vitamuffin, crumble.
2. Place the blueberries and yogurt in a small bowl, top with cinnamon, sweetener and chia seeds then top with the crumbled Vitamuffin.

Great Blog! I found it through my friend Amanda and was intrigued by the title:-) My man and I have been considering a move to Jacksonville for some time now ( his elderly folks live in the area ). I visited JAX for about 2 days on my way to Argentina last year and fell in love with everything from Amelia Is. to St. Augustine....We'll be back in the fall for a real visit. Can't wait! I happen to love cottage cheese for breakfast! I like to mix it with pumpkin, truvia, and cinnamon, and then put some fiber one on top. Or just truvia and cinnamon, and add berries and fiber one. I find it very filling! The egg bake sounds yummy too :)

Amanda-Welcome! I must say when I first moved to Jacksonville I was not very excited, however, once I discovered St. Augustine and started really digging in here I started to love it. Now I can't imagine moving away!
Cara-I do to...the pumpkin idea sounds really good. Of course anything with pumpkin is so delish.
