Every time I hear the words "Sloppy Joes" it makes me think of Adam Sandler. Have you heard the song he sang about it? Hilarious. My friend Justine gave me the idea last week to make them using her home made pasta sauce she gave me for a recipe swap day. To the Sloppy Joes she said she just added a bit of this and that so I tried to replicate it.
OH MY GOSH this was good Justine. With the melted cheese, sweetness of the brown sugar and meaty beef it all just came together perfectly. I savored every bite.
This mix would also be great over just spaghetti squash or even some whole wheat pasta.
Sloppy Joes
Serves 4
(6 WW Points for mix only, add 1 point for cheese and 1 point for Arnold Sandwich Thin)
Ingredients
1 onion, diced
1 green bell pepper, diced
1 cup frozen corn
1 tsp minced garlic
1 lb extra lean organic, grass fed, free range ground beef
Kosher salt and fresh ground pepper, to taste
1 Tbsp of chili powder
1 cup pasta sauce (I used Justine's home made)
2 Tbsp coarse ground mustard
2 Tbsp brown sugar
1 Tbsp Worcestershire
4 slices 2% American cheese (Optional)
4 thin buns, I used Arnold Sandwich Thins
Directions
1. Spray a large skillet with cooking spray and heat over medium high heat.
2. Add the onion, green pepper and corn. Sauté until softened. Add the garlic and sauté another minute.
3. Move the onion mixture to the outside of the pan and add the beef. Break up with the end of the spatula and pour the chili powder over. Cook until just browned.
4. Add the pasta sauce through Worcestershire and bring to a boil then reduce heat and cook until just thickened 7 to 10 minutes.
5. Toast the buns and put 1/4 of the beef mixture on each. Top with a piece of American cheese and top with the other bun halves.
6. Serve with vegetarian baked beans (they are much lighter than the kind with the meat and in my opinion taste the same)

my husband LOVES sloppy joes, but i never make them. this has inspired me, he'll be so happy!

I LOVE those sandwich thins! They are so good.
The recipe looks great. Maybe I can trick TEd into eating
some vegetarian meat substitute (crumbles) since the
ingredients looks like it might be so flavorful, he
wouldn't miss his beef.
I tried making sloppy joes ones and wasn't a fan. This recipe looks delicious, though. Maybe I need to give them another go. :)
