Carrot Cake for Breakfast

I've still been eating the bran VitaTops for breakfast with yogurt and thought maybe a carrot cake version would be tasty.  I did like it, but I still prefer my blueberry.  In the interest of keeping it as light as possible I didn't add any of the optional items but I bet they would be some nice additions.


Breakfast Carrot Cake
Serves 1
Ingredients

1 Raisin Bran VitaTop
1/3 cup low fat French Vanilla yogurt, I used Stonyfield
1/3 cup shredded carrot
1 packet of sweetener, I used Truvia
1 tsp vanilla
Pinch of cinnamon
Pinch of nutmeg

Additional Options:
1 Tbsp chopped walnuts
1 Tbsp raisins
1 Tbsp shredded coconut
1 Tbsp crushed pineapple

This looks yummy! I haven't tried vitatops before...but I may have to give one a try. Thank you for sharing another healthy meal!
