This one is for you Jim! Sea Bass and Scallop Grill with Mango Guacamole

I recently discovered grilling Sea Bass from one of our best friends, Jim.  He has lost a significant amount of weight, partially due to switching to fish most nights for dinner.  We had some last weekend and I realized why he's been eating sea bass for dinner almost every night.  The texture and flavor is so buttery and decadent yet light at the same time (if that makes any sense).  Fish never leaves me with that heavy, weighted feeling I get from steak.  

Could fresh sea bass be replacing my first love, seared tuna?  No, I think it is possible to have TWO loves.  (At least when it comes to seafood).  


Sea Bass and Scallop Grill with Mango Guacamole
Serves about 4

Ingredients

1 lb fresh sea bass
1 lb fresh scallops
Old Bay seasoning
Extra virgin olive oil spray

Guacamole

1 small mango, peeled, seeded and diced
1 ripe avocado
1/2 cup grape tomatoes, halved
1 jalapeno, seeded and diced
Handful of fresh cilantro, diced
Juice of 1 lime
Coarse sea salt and fresh ground pepper, to taste

Directions

1. Preheat the grill to medium heat.  Spray all sides of seafood with olive oil spray and season with old bay.  Place on grill pan or foil in preheated grill.  Grill until fish begins to flake and scallops become firm and browned on the outside.

2. Add the guacamole ingredients to a small bowl and mash with a fork while seafood is cooking.

3. Top each slice of fish with two tablespoons of mango guacamole.

4. Serve with your favorite grilled veggies.

I'm so jealous that you get to be eating sea bass all the time. It's not something we have a lot of around here. Promise me if I ever come to your neck of the woods you'll make me some!

(My grandparents live in Del Ray, but if I recall, you're not close to there, right?)

Ashlee: I think it's an aquired taste...I didn't actually like seafood that much growing up.
Cara: Oh my goodness, yes, if you make it down here you are coming over and we're grilling out sea bass! I insist!
Unfortunately no, it looks like Del Ray is near West Palm and we're in north Florida.
