A Very Exciting Tuesday

Happy Tuesday all.  Man I was foggy this morning.  I started off the day with another version of my apple-spinach smoothie.  I don't get particularly excited about it but I'll admit it does make me feel pretty good which is great because.....today is a very special day!  Tonight I am participating in a Bite Club event which is run by a local magazine called the Folio Weekly.  To qualify for the event I had to be one of the first five people to answer three questions correctly about the featured restaurant, The Grape, a wine bar and bistro. 

In the event, everyone who is participating shows up and is seated.  We get to review several pre-selected menu items (for free!) and then write about it.  Here are the menu items:

-New Zealand Lamb Nachos
-Mini Crab Cakes with Jicama Slaw (paired with a wine)
-Raspberry Mousse in a Chocolate Teacup (paired with a wine)
-Seasonal Cheese Selection

I'm really excited about this as I love trying new things!

Now for the Pineapple-Onion Burgers.

I have really been enjoying my grill and tend to do mostly veggies.  I was in the mood for a burger but wanted something a little different than my usual Cajun seasoning. 

The photo of Grilled Asian Burgers with Onion and Pineapple from Weight Watchers really caught my eye and then I saw they were only 4 points (which is really low for dinner) so I had to try them.  Now even if you aren't watching your weight don't discount these.  They are a delicious alternative to the typical cheeseburger.

These were perfect for an after work dinner as the whole thing only took about 20 minutes until everything was on the table.  These burgers had the whole salty sweet thing going between the teriyaki and caramelized pineapple.  I'll definitely be making these again soon!


 Pineapple-Onion Burgers
(Altered from Grilled Asian Burgers with Onion and Pineapple from Weight Watchers)
Serves 4
(4 WW Pts)

Ingredients

1 pound lean ground beef (with 7% fat), I used organic, free range, grass fed beef
1/4 cup scallions, sliced
3 Tbsp teriyaki sauce
1 Tbsp ginger root, freshly grated
2 tsp minced garlic
1 heaping tps coarse ground mustard
4 slices pineapple, four 1/2-inch-thick rings
1 yellow onion, sliced into thick rings
Kosher salt and fresh ground pepper, to taste
Cooking spray


Directions

1. Preheat grill to medium-high.


2. Mix the beef through mustard and gently combine.

3. Separate the mixture into four patties and spray each side with cooking spray.

4. Spray a grill pan with cooking spray and lay the onion and pineapple rings.  Spray tops with additional cooking spray and season onion with salt and pepper.


5.  Place the burgers and grill pan on the grill.  Grill pineapple, turning once, until lightly charred, about 4 minutes; remove from grill and cover to keep warm. Grill burgers and onions, turning once, until burgers are desired degree of doneness and onions are lightly charred and tender, about 7 to 9 minutes.
 
6.  Top burgers with one slice of pineapple and several onion rings.  Enjoy!

Your event tonight sounds like so much fun! And those burgers - love the idea of pineapple on top. I used to be a points counter myself but have fallen off the wagon. Need to get back on...
