After browsing around some food blogs to look for some recipes to use when I get my CSA veggies I came across the most wonderful recipe for a 5 Minute Autumn Soup created by Michelle at Find Your Balance.
I just thought it was brilliant; simple, healthy and a wonderful mix of flavors. I had just had a sweet potato for breakfast so I decided to change this soup up for dinner and add pumpkin puree and a bit of chili powder for some heat. I just love anything sweet and spicy.

Pumpkin, Apple and Kale Soup
Slightly altered from 5 minute Autumn Soup from Find Your Balance
Serves 4

Ingredients
1 carton chicken broth
1 can pumpkin puree
8 ounces chopped kale
2 apples, diced
Salt, pepper, red chili powder, to taste
Directions
1. Heat chicken broth and pumpkin puree over medium high heat; bring to a boil. Add kale, salt, pepper and chili powder; reduce heat and simmer 20 minutes or until kale is softened.
2. Add diced apples to soup mixture. Stir and enjoy!

I dig the addition of chili powder! Nice! How on earth did you go about figuring the nutritional info??

Cucumber recipes- I didn't get that many cucs. The ones I did I used in Salads and to make greek/Mediterranean foods- like chicken gyros with tomato cucumber salad. Also, these recipes look good:

My husband has a dumb notion he doesn't like kale and isn't willing to give it a chance (he pretty much likes everything else, so I guess I can't complain too much). Do you think another green would work in its place well?
Ah yes…there is nothing better than a simple soup on a cool Fall day…especially with some crusty bread. I have yet to add apples or pumpkin to any soup recipe, so this would be a fun experiment for me! Thank you for sharing. I hope your weekend is going well!

Tasha: I would try a hearty spinach and just stir it in at the end rather than cooking it the 20 minutes.

I love how simple this soup is – and it looks just perfect for a cold winter/fall day.
As a vegetarian, I'd use vegetable broth in place of chicken broth, but the rest of the soup sounds really yummy as it is!
