Happy Sunday!  I’m back in town and have a recap of my campout to Crooked River State park and my camping dinner creation.

We arrived Thursday night and I successfully backed my new camper into the spot.
(This is not as easy as it sounds)

 My mom and dad got the spot right next door.
Notice how color-coordinated we were.

…and got out my camp chair.  Go Noles!

Friday night was my turn to make dinner. 
But first I needed a nice glass of wine.
Even though it has been cold out I still seem to be stuck on chard (which is very weird for me….I’m usually a dry red kinda girl).
This was the 2008 Biltmore Estate, North Carolina Chardonnay.  Very tasty!
   
My parents brought over some red and I started prepping my kale.

Plenty of room for cooking!

Don’t mind the camp-hair and makeup free face.  Yikes! 

And the final masterpiece!
 
Sun Dried Tomato Chicken Sausage with Kale, Wheat Pasta and Fresh Parm

Ingredients

Olive oil cooking spray
1/2 cup white wine, divided
1 onion, chopped
1 heaping tsp minced garlic
1 bunch kale, washed, de-stemmed and chopped
Whole wheat pasta (cook 4 servings according to package directions)
Coarse sea salt, fresh ground pepper, garlic powder, to taste
Fresh parmesan shavings (about 2 ounces, optional)

Directions


1. Spray a large skillet with cooking spray and heat over medium high heat.  Add sausages and brown on all sides.  Remove from skillet and cool then slice into bite size pieces.


2. Add the onions and sauté until soft, about 5 minutes; add the garlic and sauté an additional minute.  Add 1/4 cup of white wine and kale; season mixture with salt, pepper and garlic powder; stir until combined.  Add additional 1/4 cup white wine and tent pan with foil for about 20 minutes or until kale is softened. 


3.  Add the sausage and cooked pasta to the kale mixture.  Stir and cook 2 minutes or until entire mixture is heated through,


4. Divide mixture into five servings.  Top with shaved parmesan and some additional cracked pepper.
