Table for Two. A Giveaway!

Last weekend was spent camping in St Augustine and doing "the usual" which consisted of hitting the farmers market before lunch and then heading back to the campground to relax in the afternoon.

This time at the market something special happened.

I got to meet Warren Caterson, the writer of Table for Two!  It is a fabulous cookbook that features recipes with smaller servings for, you guessed it, two people.  I have so many now marked off I wasn't sure where to start.  Should it be the Thai Spiced Grilled Shrimp?  The Rice with Pine Nuts and Raisins? Flat Iron Steak with Honey and Balsamic Vinegar? Vegetarian Korma?

Since it was my two year old and I for dinner as the "table for two" that night I let her choose as I read a few of the recipes aloud thinking she would want one of the rice dishes.  In the end I should have guessed it.

Buttered Noodles. 

Ok then.  Buttered Noodles it is.  I would typically use olive oil but, as I've said in the past, sometimes everything is better with a little butter and keeping it simple is one of the best ways to showcase each ingredient.  I really struggle with the whole keeping it simple thing so this would be a good exercise.

Since she is allergic to wheat and dairy I used brown rice noodles and soy free Earth Balance.

After I prepared this I remembered why keeping it simple is so great.  You miss out on some of the best recipes when you continue to complicate things and throw a bit of this and bit of that.  I loved it.  Simple. Delicious. 

There are so few versatile cookbooks that can offer dishes I am dying to try like Sweet Potato Burritos and Malaysian Quinoa, that my husband will love like Grilled Pork Tenderloin with Dijon Mustard, and, that my daughter loves, like these hot buttered noodles.
In the spirit of keeping it simple I dressed mine up with grilled veggies and a bit of goat cheese and that's it.

Hot Buttered Noodles for a Table for Two;

Ingredients

1/4 lb brown rice pasta, cooked to package directions
1 Tbsp Earth Balance (soy free), room temp
Sea salt and garlic powder, to taste

Directions

1. Mix all ingredients.

My sister LOVED spaghetti & butter as a kid. And you are so right about missing out on the simplicity by over-complicating (a really bad habit of mine). I mean, you can hardly beat tomatoes, basil and oregano as a topping for pizza or pasta, yet there's a tendency to try to make it better.

I don't really have an absolute fave table for two meal to be honest. I enjoy changing things up too much perhaps.

I have started to like how simple ingredients lead to delicious food. The fresh ingredients are what matter most!

I have also started to downsize my meals so they make more like 2-3 meals, so I don't get as bored with leftover repetition during the week.

My favourite for 2 meal lately? Probably my roasted cauliflower and chickpeas with dukkah.

Oh gosh! It's so hard to say what my favorite thing to cook for two is... but if i have to pick, I would say that it's a stir fry. That's the easiest thing to cook for just two people. Just throw some ingredients into a stir fry-er and that's it! :) I hope I win!

My/our favorite is baked salmon. We've found a technique that is simple and produces the most buttery, melt in you mouth salmon! I make a paste out of olive oil, crushed garlic, lemon zest, sea salt, and herbs and coat two single serving filets with the paste. Then bake them at 250 degrees (the low heat is key) for 20 minutes. Voila. Add a nice salad and some sauteed veggies and you have our perfect meal!

When I am cooking for two, its usually a night when its just me and my son. Since he loves pasta, we most often do a take on these buttered noodles and make Pasta, Peas and Parmesan. I just add a handful or two of frozen peas at the end of boiling the pasta, then a smidge of butter, a splash of milk and freshly grated parm. So simple and so delicious.

Love this blog! I'm a Seattle transplant from FL originally and this reminds me of a little slice of home. I love doing a veggie and tofu stir fry with all my leftover veggies. Cook a little rice or quinoa and dinner is on the tBle in 20.
