Grilled Tomato Sauce

Have you ever made a grilled tomato sauce?  Ooooo…..have I got the recipe for you!

 

A few weekends ago I took a trip to NYC. A friend of mine made salsa by grilling the tomatoes, onions, garlic etc. and then pureed it for a smoother texture. The flavors were so rich and flavorful that six adults were fighting over it.  That salsa is the inspiration for this dish.  

 

School started for us last week. Of course, I was on the hunt for easy, delicious “survival dinners”.  You know, the ones you make when you’re exhausted and can’t think?  This one fit the bill perfectly. In fact, I pre-made the sauce so all I needed to do was cook the pasta, steam some broccoli and dinner was done.  I added a bit of nutritional yeast into my sauce for a cheesy flavor and finished with some red pepper flakes. Every bit was gone.

Ingredients
  1. 6 vine ripe tomatoes
  2. 1/4 sweet onion
  3. 5 cloves garlic
  4. 1 Tbsp olive oil
  5. Coarse sea salt and lots of fresh ground pepper, to taste
  6. 2 tsp fresh chopped oregano
  7. 2 tsp fresh chopped basil
Instructions
  1. Preheat the grill to medium, quarter the tomatoes and peel the garlic.
  2. Form some foil into a large "boat" and add the tomatoes, onion, garlic, olive oil, salt and pepper inside the foil boat; fold over to make sure all sides are covered. I placed my boat in a heat-safe pan so if the juices ran out, it wouldn't flare up. Place the foil packet over the grill flames and cook until tomatoes are soft; about 10-15 minutes. Remove from heat and let cool - be sure to not let the juices run out.
  3. Place tomato mixture in a bowl; using an immersion blender, puree until smooth; add fresh chopped oregano and basil; taste and re-season with additional salt and pepper, if necessary.
