Lasagna Quinoa Burgers

Lasagna Quinoa Burgers are a super fun way to get the lasagna flavor you love this fall – without the pan.  

 

You know how we all tend to make the same things over and over until someone keels over and dies of boredom?  That was my family.  I had to break out my thinking cap. You’d think that writing a food blog would help me be more creative, but sometimes, I think so much during the day that all the creativity is sucked out of my brain like a Dyson vacuum sucking dried bits of parsley from the cracks in my concrete kitchen floor.

 

Tip: When you can’t think of something new to make, think about what your family’s favorite foods are, what you have on hand and how you can create a fun twist on that.

 

See that tip above? That’s how I got over my recipe block.  I said, self, what do you feel like eating?  What do you love?  A conversation I’d had at a recent vegan Greek dinner popped into my head. My friend Anna mentioned a Southwest Tortilla Bake I used to make all the time. It’s a lot like a lasagna, but with black beans and Southwest seasoning.  My thoughts turned to traditional lasagna and the black bean burgers we love to make. Why not combine the two ideas but use the chickpeas and quinoa I had on hand?  Voila. The Lasagna Quinoa Burgers were born.  My daughter was so excited, she made this video for you. We tried the overhead filming method.  We still need some practice, but we’ll get there!

 


 

If you’ve never made your own burgers, now’s the time to make these Lasagna Quinoa Burgers.

 

If you have pre-cooked quinoa and chickpeas, it will save you about twenty minutes.  I loved how these saucy burgers were crisp on the outside but tender and packed with flavor on the inside.  We decided to forgo buns and toast some DeLand oat bread –  with simple ingredients and no gluten added (Oat bran, Oatmeal Flour, Filtered Water, Sea Salt, Baking Powder).  We used the top of a mason jar to make the round shapes.  We hope you love these as much as we do!

Ingredients
  1. 2/3 cup veggie broth
  2. 1/4 cup uncooked quinoa
  3. 1/2 tsp salt
  4. 1 cup cooked chickpeas
  5. 3/4 cup marinara sauce, divided
  6. 2 tsp pizza spice
  7. 1 tsp garlic powder
  8. ¼ cup instant oats or rolled oats pulsed a few times
For the Optional Toppings
  1. 1 cup non-dairy mozzarella such as Miyokos Kitchen (shredded), or Daiya if Miyokos isn't available
  2. 1-2 Tbsp Nutritional yeast
  3. Toasted buns
Instructions
  1. Preheat oven to 400F
  2. Bring quinoa, broth and salt to a boil over medium high heat; reduce heat to low, cover and cook for 15 minutes; remove from heat (still covered) and let sit for five minutes.
  3. Smash 1 cups chickpeas and add to a large bowl; spoon quinoa into bowl with chickpeas and stir in ½ cup marinara sauce, pizza spice, garlic powder and instant oats; form into four patties.
  4. Bake at 400F for 8 minutes; flip and cook an additional 8 minutes, or until burgers are browned.
  5. Top each with 1 Tbsp marinara sauce, non-dairy cheese and nutritional yeast; place back in oven until cheese is melted.
Notes
  1. Save a few steps and use pre-cooked, leftover quinoa and cooked chickpeas!
